L'altre dia em vaig adonar que tenia una terrina de mascarpone des de feia dies a la nevera i que faltaven dos dies perquè caduqués! I evidentment em vaig posar a buscar en els meus blogs de cuina una recepta amb mascarpone que em fes gracia. Al blog l'Exquisit de la Sonia hi vaig trobar uns espaguetis amb bacon, espinacs i mascarpone que van sortir boníssims (un altre dia penjaré la recepta) i també hi vaig trobar uns enrollados de mascarpone. La recepta és molt fàcil de fer i el resultat bastant professional.
Els ingredients que es necessiten són:
- 310 gr. de farina (farina normal)
- 250 gr. de mascarpone (també podeu fer servir un altre formatge cremós tipus philadelphia)
- 125 gr. de mantega tallada a daus i a temperatura ambient
- 1 culleradeta de cafè de sal
- 1 o 2 cullerades soperes d'aigua ben freda
- sucre
Per la preparació:
Agafeu un bol i hi poseu la mantega, que serà tova, amb la farina, el mascarpone i la sal i amb les mans ho aneu barrejant fins que quedi una massa homogènia. Si veieu que es desenruna afegiu-hi una mica d'aigua que estigui ben freda i ho torneu a barrejar formant una bola de la pasta. Agafeu paper de film i ho emboliqueu i ho poseu a reposar unes 4 hores a la nevera

Mascarpone is that kind of product that sometimes when I go to the supermarket I buy. I don't always have a specific idea of which recipe I'm going to make although tiramisu is one of my favourites deserts.
The other day I realised that I had a pack of mascarpone in my fridge and it would go off in two days! So I looked for a recipe with mascarpone on my favourite cooking blogs. In the blog l'Exquisit by Sonia I found a recipe of spaghettis with bacon, spinach and mascarpone and they turn out to be delicious (I will post this recipe another day) and I also found another recipe called enrollados de mascarpone which would be translated as a mascarpone biscuit. The recipe is very easy to make and they look and taste quite professional.
The ingredients you will need are:
- 310 gr. of flour
- 250 gr. of mascarpone (you can also use another cream cheese like Philadelphia)
- 125 gr. of room temperature butter, cut in small pieces
- 1 teaspoon of salt
- 1 or 2 table spoons of cold water
- sugar
Preparation:
Take a bowl and mix, by hand, the flour, the mascarpone, the butter and the salt until you get a smooth mixture. Then if the pastry needs a bit more liquid you can add some cold water and make a ball shape. Wrap that ball with film and leave it in the fridge for 4 hours.
Then take the pastry and, in a clean and cold surface, roll the pastry until you get a rectangle. Spread some sugar and take care that the pastry doesn't get stuck to the surface. Once you have the rectangle, start rolling up one side until you get to the middle of the rectangle and then do the same with the other side; that way you'll get the right shape. As you are rolling the pastry add some sugar to it. When both sides are rolled, cut it into pieces of 1 cm more or less; I made smaller pieces and they were more crunchy, it's up to you!
Then take each piece and flatten them a bit with your hand and coat them in sugar. Put them on a tray with baking paper and in the oven 20 minutes at 200 degree. The time is not exact and if you make different sizes this will change, so just take a look often and take out the ones that look cooked. Let them cool and eat them! I recommend eating them with a glass of ratafia (which is a Catalan liqueur similar to Jägermeister), the combination is great!
